What is matcha?
Matcha is a green tea made from leaves picked from the tea plant — camellia sinensis (ALL tea comes from one plant. This includes black, white, green oolong etc…). Matcha is special because these plants are shaded for a period of time which allows farmers to control the compounds of the leaves. Shading leads to higher chlorophyll production, caffeine levels, l theanine, and natural sugars being pulled from the soil. All of these factors lead to a brighter, tastier leaf with tinges of umami.
When these leaves are picked, they are steamed for about 40 seconds and cooled; which preserves the green compounds of the plant and protects it from browning (oxidation). Steamed matcha leaves are then ground into a super fine powder. Matcha packs extra punch because you are consuming the entire leaf rather than just infusing it into water. We love it and you will too.
