What is the difference between UMI and KAIGAN matcha?
UMI differs from KAIAGN in many ways and every growing region has different standards of flavor and product. The primary differences are between our Ise matchas are:
Seasonal Growing Differences: Tea leaves harvested earlier in the season, right after winter, have a higher concentration of nutrients gained from the soil. These minerals make for a more flavorful, dynamic tea leaf. Its where we get the natural sweetness and umami with less tannin. The tannin can be the more bitter flavor found in harvests later on in the season,
Production Process: UMI leaves are shaded for a longer time period which leads to higher chlorophyll production, caffeine levels, l theanine, and natural sugars being pulled from the soil. All of these factors lead to a brighter, tastier leaf.
Texture: UMI l is a finer powder than KAIGAN which results in a pure velvet sip.
With the a shorter window for harvest combined with the time and care put into the leaves during production. UMI has a higher price point. It is really important to us at Matcha Freak that our products remain accessible to most, even the fancier ones.

Drink UMI Matcha 🍵
1. Sift 2g UMI Matcha 🌱
2. Pour 2oz. 170 F water 💧
3. Whisk to paste ⚡️
4. Add 5 oz 170 water. Whisk while adding. Allowing matcha to integrate as water is added.
5. Drink as is. Pure & Delicious.
After tasting it with just water, we like adding 1-2 oz milk (cold or steamed) to really showcase the milkiness 💚
